The fundamental flavor challenge

A core hurdle in crafting exceptional NA beer is understanding that these beverages taste different not simply because flavor compounds are missing, but because the removal of ethanol disrupts how flavors are balanced, released, and integrated. As the vital flavor carrier ethanol is reduced, brewers often face a beer that feels thinner and less complex. Furthermore, bitterness can be perceived as harsher and more lingering without alcohol to support the mouthfeel.

Biological production and mashing

This first installment of the white paper focuses specifically on biological production processes. These methods limit ethanol formation by utilizing modified mashing regimes or by employing specialized yeast strains with limited fermentation capacity.

Mashing is a critical first step, as limiting fermentable sugars directly lowers the potential alcohol ceiling. Methods like high-temperature mashing (above 75° C) restrict maltose production, while cold mashing (under 50° C) extracts color and flavor with minimal starch conversion.

The power of maltose-negative yeasts

A major focus of the white paper is the utilization of maltose-negative yeasts. Because these strains cannot metabolize complex sugars like maltose and maltotriose, they produce very little alcohol. Despite this limitation, they remain highly effective at reducing undesirable aldehydes and producing essential esters and higher alcohols.

The white paper details how different strains can generate distinct aroma profiles – ranging from the pronounced citrus and floral notes of Saccharomyces cerevisiae var. chevalieri to the intense tropical fruit aromas of Pichia kluyveri. Because traditional hop pellets contain enzymes that can trigger “hop creep” and unwanted alcohol formation, Barth Haas highly recommends liquid hop extracts.

Products like SPECTRUM and PRYSMA® deliver concentrated hop aromas and thiols without adding fermentables. PRYSMA®, for instance, features low viscosity and can be pumped directly into the beer stream, replacing standard pellets at an efficient 1:8 ratio.

Regardless of the production method, NA beer is rich in valuable micronutrients. It provides relevant amounts of B-complex vitamins, polyphenols, and minerals like magnesium, potassium, and phosphorus. This increasingly positions NA beer in the context of sports, regeneration, and wellness.
